If your only experience with honey is the plastic bear from the grocery store, then such a variety of raw honeys can seem intimidating. One of my favorite parts about the Bee Raw experience is the font of information contained on their website. Essentials like flavor profiles are present, but so are recommended recipes, tea pairings, and free guides on honey cocktails and cheeses! It's a road map to exploring honey that introduces you to these unique flavors on your own terms. Of course, if you're anything like me, you'll also just want to eat some straight out of the jar, and that's definitely encouraged as well! The trick to such a wide spectrum of honeys lies in Bee Raw's single source philosophy and raw honey focus. The hives supplying the honey for Bee Raw (apiaries, as they are called) are located in environments with a predominantly single type of flower providing all the pollen that the hive needs. Colorado Sweet Yellow Clover honey is derived entirely from the pollen of yellow clover, while Maine Blueberry honey isn't named for blueberry flavoring added after the fact, but because the pollen comes from wild low bush blueberry flowers in Maine. Once collected, Bee Raw performs minimal processing on the honey. Sure, they filter out the "bee parts" and other pieces of nature that may find their way into a beehive, but they aren't removing the pollens and micronutrient s that give each honey its unique flavor, nor heating it up to extreme temperatures. This may sound obvious, but these processes are exactly what gives the plastic bear honey its homogenous texture and (lack of ) flavor. But you don't need a science lesson to know that these raw honey varietals from Bee Raw taste amazing! Try a flight of 1.5 ounce vials, or a collection of themed full size jars to figure out your favorite (I like the Georgia Holly Blossom to pair with my cheeses). Regardless of your favorite flavor, you're sweet new purchase will help Bee Raw and their Save the Bees Fund combat colony collapse disorder and make sure that honey bees are around to pollinate the earth for years to come.
